600g fresh flat rice noodles
1/4 cup peanut oil
150g bacon sliced
300g sirloin steak sliced thinly
3 glarlic cloves crushed
4 small red chillies deseeded and thinly sliced (optional)
12 spring onions sliced
1/4 cup sugar
1/3 cup soy sauce
1/2 cup oyster sauce
3 beaten eggs
Heat wok and add 1 tablespoon of oil. Fry bacon until crisp, then remove.
Heat another tablespoon of oil in the wok and fry beef for a couple of mins, then remove.
Heat remaining oil in the wok, add garlic, chilli, spring onion and stir fry for a couple of seconds.
Add beansprouts for 10 seconds then add sugar, soy sauce, oyster sauce and noodles. Stir fry for 1 - 2 mins, then add the cooked bacon and beef, heat through.
Push the mixture to oneside of the wok then add your beaten eggs and let it cook. Serve and enjoy.
