Half pint fresh double cream,
Quarter pint of fresh single cream,
Rind and juice of one lemon,
1oz castor sugar,
Any small fruit ( raspberries or redcurrants work well ) to garnish
Pour double and single cream into a saucepan with the finely grated lemon rind and slowly bring almost to the boil then remove from the heat.
Stir in the castor sugar and the lemon juice.
Pour the mixture into 4 to 6 individual dishes, cover and leave to cool and set.
Chill for an hour then decorate with fruit garnish before serving.
