425 g tin sliced mango in syrup drained
200g softened butter
225g golden castor sugar
4 large eggs
200g SR flour
50g dessicated coconut plus 3tbs for sprinkling on top
140g greek style coconut yogurt
heat oven to gas 4
grease and line a 20 by 30 cm baking tin
dry the mango on kitchen towel and cut into 3cm pieces
place butter and sugar in mixing bowl and whisk till soft and creamy
add eggs 1 at a time and beat well after each 1 adding a little flour if needed
fold in flour and coconut then the mango
pour mixture in to the tin and smooth the top
sprinkle with the extra coconut
bake for 25/30 mins until golden and a skewer comes out clean
cool for 10 in tray then turn out on to wire rack
goes well with a dollop of coconut yogurt
