Oh My Recipes
1 and 1/2 cups plain flour sifted
3/4 cup castor sugar
1/2 teaspoon salt sifted in the flour
1/2 teaspoon baking powder sifted in the glour
125 gr butter at room temperature
2 eggs lightly beaten
1/4 cup milk
2 tablespoons gin
juice and zest of 1 lime
100 gr butter room temperature
2 1/4 cups icing sugar sifted
2 tablespoons gin
1-2 tablespoons lime juice
preheat oven to 180c
Beat butter and sugar till light and fluffy
Add lime juice zest milk and gin
Mix in half the egg till just incorporated then add the rest and mix for another minute or two
Using a spatula fold in the flour salt and baking powder until the batter is just combined
Put into paper muffin cases and bake for 15-20 till lightly golden
while the cakes are cooling start making the icing
Beat the butter till creamy and add the rest of the ingredients and beat till the desired consistency
pipe or spread on the cold cakes
you can put a very thin slice of lime or a small grating of lime zest on top if you like.
