Herbed Chicken Salad

120g light mayonaise

2 tbspoons cider vinegar

2 cloves garlic--crushed

3 tbsoons chopped fresh dill

450g skinless chicken fillets--diced and cooked

1 red pepper--chopped

30g crumbled feta cheese


Blend mayonaise,vinegar, garlic and dill.leave in fridge a good 2 hours

Stir together chicken.pepper and feta and blend with the chilled mayonaise

Serve as a sandwich filler or over a bed of crisp lettuce
