2 tbsp vegetable oil2 chicken breasts, skinned and boned4 oz (125 g) broccoli florets1 carrot, thinly sliced4 oz (125 g) mange tout2 spring onions, thinly sliced1 tbsp soy sauce
1. Heat the oil in a wok or heavy frying pan until smoking. Cut the chicken into strips and stir fry for 2 minutes.2. Remove with a slotted spoon and keep warm, add the broccoli and carrot and cook for a further minute.3. Add the mange tout and soy sauce. Return the chicken. Toss well.4. Serve immediately with egg noodles.
