warm lentil salad
125g green lentils
1 tbsp olive oil
1 medium onion, finely chopped
200g marinated red peppers, drained and sliced
200g broccoli, broken into florets
100ml vegetable stock (didn't have, used chicken)
few leaves of lemon thyme if you have it. I used a little bit of lemon zest.
Wash the lentils in plenty of cold water, then put into a saucepan with lots of cold water, bring to the boil and simmer for about 20-25 mins til they are tender. Drain and set aside.
Heat the oil in a pan (you'll need a lid) and fry off the onion for about ten minutes till it's soft and golden, Add the peppers, stock and broccoli, brin g to the boil and simmer gently, covered, till broccoli is tender, about ten minutes. Then stir the lentils through, add the lemon zest and serve warm.
You can add mozzarella cheese and toasted pine nuts if you want to make it more substantial.
Each portion without the extras has 181 calories of which 5g are fat with 1g saturated fat.
