250g Chopped Chestnut Mushrooms
8 Sliced Spring Onions
Spray a large saucepan with oil and heat. Add the mushroom, spring onions and chilli and stir fry for 2-3 mins. until the juices start to run.
Add the chopped coriander and soy sauce with 1 Litre of hot water. Crumble in the stock cubes and then stir until dissolved. Bring to a simmer and cook for about 5 mins.
Serve with coriander leaves.
Yummy and very low fat
