wholesome bean soup
2tbsp olive oil
1 leek chopped
1 carrot, peeled and cut into chunks
2 rashers streaky bacon chopped
50g dried soup mix
600ml hot vegetable stock
a handful of shredded savoy cabbage
Heat the oil in a large pan. Add the leak, carrot and bacon to the pan and fry for 10 minutes until starting to soften. Add the soup mix and hot stock. Cover and bring to a rapid boil for 10 minutes, then leave the soup to simmer for 45 minutes or until all ingredients are tender.
Add the cabbage, cook for 1-2 minutes then serve.
