4 large potatoes
2 tablespoons olive oil
125g pancetta or bacon chopped up
6 tablespoons of double cream
125g of grated cheese
Prick potatoes and put on to a baking tray on top shelf of the oven for about 1 hour 200c 400f gas mark 6
Allow potatoes to cool then cut in half scoop the flesh into a bowl.
Pre heat the grill and line the tray with tin foil.
Brush outside of potato skins with oil and heat under the hot grill untill crisp.
Fry pancetta or bacon.
Add to the potato flesh the cream, cheese and pacetta or bacon and mix together.
Fill the potato skins with the mixture and return to the oven for 15 mins.
Serve with soured cream or sweet chilli sauce.
